Iowa Avenue


This is a Mache chicken salad I threw together with leftover chicken breast, feta cheese, sliced almonds, olive oil and lemon juice for a dressing. I later realized it needed a fruit so I added a Clementine and some sliced grapes. This really hit the spot for me.

Mache, also known as Lambs Lettuce, is a flavorful salad green native to Europe. It resembles spinach leaves except these grow in sort of flower of leaves and are much smaller. The leaves are tender, delicate and tasty. I found this bag at Trader Joe's.

I bet it taste as good as it looks!
I had no idea about Mache. Why is it called Lambs lettuce? Should it be because lambs eat it? At Wikipedia, it is also called Corn Salad. Do you get this at the supermarket or produce store? Does it have same nutrients as lettuce? Just curious... :)

I usually get the baby lettuce mix that has the dark leaves as well. Anyway, the recipe looks good. I guess I can make it with veggie chicken for me...
