Oh, well... finally pasta e basta! Our Sunday pasta meal was postponed for today.
I used 3/4 cup of Multigrain Penne with Flax pasta and added some spinach with sliced garlic on top. It is simple and easy to make... just take a bunch of fresh & washed spinach to the pan and cook for a few seconds. Add some sliced garlic and cook for a few minutes with a teaspoon of olive oil.
Serve on top of the pasta and you will have almost a complete meal.
This dish has a good source of iron, vitamin C and calcium. Because this particular pasta is multigrain, it has whole wheat as well as spelt, barley, oat and flaxseed.
