What a great little site! I look forward to reading more here.

I am fairly new to blogging and started my own to follow my journey back to good health.

I was diagnosed with Interstitial Cystitis ten years ago. Eating vegan many years ago, the disease went into remission. I fell off the wagon and went back to SAD food, only to have the IC return.

Looking forward to good health once again!

I just check your blog and your raw recipes look absolutely delicious! I am not sure if could handle it everything raw. My son eats mostly raw (sandwiches, raw veggies and fruits) alone. Only when he comes home eats what I cook.

Do you need a dehydrator for most raw recipes? How a dehydrator works? I don't want to sound naive but never used it...

Hi Susana - and thank you! Not everything in my blog is raw. There are some cooked recipes, but as time goes on, I feel better when I eat raw. I don't know that I'd ever be 100 percent. To me, it's about balance and listening to my body. Today, I decided to make a shift, because I've stopped losing weight and I think I'm eating healthy...but I need to look at what I am eating....and what MY body needs in order to BE healthy.

I did not have a dehydrator to start, but since I got one, I'm having a blast and I must say, it makes raw much easier and fun!!!!! If you can find one used on ebay...it would be worth it!! I'd go for the excalibur!

What we are finding is that when we take a raw dish and dehydrate it for a few hours...as it takes the water out..the flavors get really concentrated!!!! Things just taste great!

Also..veggies that would be crispy and kinda rough to eat raw ...can be softened and take on an almost "roasted" consistency...which makes you FEEL like they are cooked..even tho they are not hot...the D is usually going at 110 degrees..so all of the enzymes stay in tact and are not destroyed. Cooking kills the natural enzymes in food that aid in digestion, not to mention the nutrients.

I have to admit that it's my favorite new toy..but...YOU CAN DO SOME of these recipes in the oven..it's not particularly economical, but you can keep oven at its LOWEST setting and even crack open the oven door....I have never done it, but I have heard that people have.

But there are lots of recipes you can do without it..I just find the food is easier for me to eat when its dehydrated....but again..feel free to try the oven.
