What's for dinner? Healthy gnocchi

As Italian, we usually say Pasta e Basta! meaning nothing else but pasta! But this could be fattening if you have white pasta with no nutrients.


Over the years, I learned how to make it in a healthy way using whole wheat flour and low fat items instead.

I decided to make a healthy dish called "gnocchi" using whole wheat flour, spinach and low fat ricotta cheese.

I haven't measure the ingredients exactly but used about:

*1/2 cup spinach, steamed, drained and chopped
*1/4 cup low fat ricotta cheese
*1/2 cup whole wheat flour to start and more for kneading
*1/8 cup ReddiEgg (equivalent to 1/2 regular egg)
*pepper to taste

This amount should serve 2.

Mix all ingredients forming a smooth ball. Add more flour if necessary.


Knead the ball adding more flour and cut it in smaller ones and form long rolls kneading them with your fingertips. Cut each roll in small pieces about 1/2 inch long. Press each piece against a fork to make some ridges.




Cook them in boiling water. They will be ready when float to the top. Having a good taste themselves, there is no need to add any pasta sauce -at least for me-. Serve with light butter and Parmesan cheese on top.

I used to have a friend that was a private chef. He was from Italy, and cooked
the Tuscany variety. One Christmas he had a bunch of people over at his place,
and he prepared gnocchi, and I cannot ever remember feeling so full and stuffed
as I did that night. If you have never tried gnocchi then be careful how much you
eat because it goes right to the bottom of your stomach fast. But it's good.........:)

Gnocchi could make people full, especially the ones made of potatoes and white flour.But these particular ones will give you some nutrients other kinds don't have.

Yes, they are good!
