Hummus without the beans. One of my favorite recipes. Give it a try! You will not be disappointed.
How to prepare Zucchini Hummus.
1 1/2 c. zucchini (peeled, chopped)
2 Tbs raw tahini
2 Tbs fresh lemon juice
1/2 tsp crushed garlic (1 clove)
1/4 tsp cumin
1/4 tsp paprika
1/4 tsp salt
Process and enjoy!

2 Large romaine lettuce leaves
1/2 c. Zucchini hummus
1/4 red bell pepper
2 Tbs sliced black olives
